Booklet Layout needed

I'm in need of a simple-to-understand layout for creating a multi-page booklet. Picture the paper in landscape orientation with two "pages" on it. Now, I intend to print front-to-back, several pages-worth of material. Can there be a simple way to set-up a document so that I can just "pour in" the prepared pages and have them come out correctly when printed and folded? With just two pieces of paper, representing eight "pages", I can figure out which page goes next to which page and what should be on the front and the reverse. But when it gets into 20+ "pages" of text, I get very confused! To top it off, I want to paginate each "page" separately, so that I can create a Table of Contents. Is it possible to automate that function, as well?
